chimichurri lamb chops
I started this trend of finding recipes on Instagram and trying to replicate them, here is one from a few weeks ago! Lamb chops & chimichurri, mashed potatoes with caramelized onions, balsamic vinegar oven roasted Brussel sprouts.
ingredients
For the chimichurri (pt 1)
1/2 cup olive oil
2tbsp red wine vinegar
1/2 cup parsley
3 cloves garlic, minced
For the chimichurri (pt 2):
1 red chilli
Small handful oregano
1tsp salt
pepper
For the lamb marinade:
1 tablespoon each of parsley, rosemary & thyme
1/4 cup olive oil
Zest of half a lemon
instructions
Prepare the cutlets and then add it to a bowl along with the parsley, rosemary, thyme salt, olive oil, and lemon zest.
Mix to combine the marinade. Let it rest for at least half an hour.
Put the cutlets on hot pan for about 2 minutes on each side.
